Elena Laskaridou, born in Kavala, Greece in 1993, obtained her Bachelor’s degree on Nutrition and Dietetics in Thessaloniki, Greece. In September 2016, she started het Master’s degree on Molecular Nutrition at Wageningen University and Research, the Netherlands. During her MSc thesis a the department of Nutrition, Metabolism and Genomics, she explored the gender differences on the metabolic profile of humans with abdominal obesity. She moved to Maastricht for her MSc internship at the group of Human Biology, where she performed a pilot study and investigated the intra- and inter-personal differences in the postprandial glycemic responses to standardised mixed meals in healthy individuals. After graduating with a MSc on Molecular Nutrition and Toxicology in October 2018, she has been working as a research assistant in the Diabetes and Metabolism Research Group at Maastricht University.
